Our First Week Eating Vegetarian For Dinner

The first stage in transforming our diets is going to be going meatless for all of our evening meals. We start tonight.

I still have some fish to finish up and Kieran has some Pogos to eat, so we’re going to finish that up for lunch. I also used up the last of the ground beef in the freezer in our chili, so all of us will be eating that in various forms over the next little while. One night in the next week or two will be a chili night, three lunches for Sean will be chili and the baby has a bunch of pureed chili that has been frozen, so we’ll try to get through that as fast as we can.

I also have a bag of peel and eat shrimp to finish off. I can get started on that project tonight during my Sunday night date with Space channel and their 10pm showing of Battlestar Galactica.

Some folks might advocate just tossing the remaining meat-y foods and starting fresh but I just can’t afford to throw food out. And, besides, I really like seafood! I’m torn on whether or not to quit seafood. The Omega 3 fatty acids are good for the brain and shrimp and fake crab meat (see the multiple reference throughout this blog to my a) cheapness and b) poorness) are yummy. To me.

This week’s menu includes:

  • PC Meatless Burgers – tonight’s meal
  • Quesadillas with brown rice, Black Bean and Corn Salad and guacamole
  • Burritos
  • Quinoa Stuffed Peppers
  • Fried rice with tofu
  • Pasta with veggie ground round

How is that for a first week of eating vegetarian at dinner?
Mexican foods like Burritos and Quesadillas make it easy. There are so many yummy dips and things to stuff into the tortillas that noone ever misses the meat. It is pretty rare that I’ve put meat in. We’ve ordered them with chicken when we are out, but at home I’m too lazy to cook up chicken pieces on top of all the other prep I have to do.

The quinoa stuffed peppers will be the big experiment. I’ve never made it before and I haven’t settled on a recipe I like, so we’ll see how that goes.

The tofu/ground round stuff is easy, too. That’s a straight substitution.

I’m kind of excited. It felt a bit odd leaving the grocery store without any meat.

  1. Awesome.You will have such fun discovering great new recipes to try.

    I have had periods of up to a year of eating no meat. It feels really good, though I tend to get a bit anemic after a while despite ample protein. I still try to make at least one meatless dinner a week, and my breakfasts, lunches and restaurant choices tend to be veg.

    Also I love soy milk YUMMM

    I have a bunch of good veg cookbooks if you would like to borrow any :)
